Chocolate Brownie Cake

 You know I love baking, eating cake, and anything that involves chocolate, so when I found this recipe for a chocolate brownie cake in Tanya Bakes I knew I had to make it with Tom. This is actually really easy to make, and oh my does it taste good. It's essentially like eating melted chocolate in a block that's squishy with a top layer that's like cake. Basically, it's really yummy and you should all give it a go!





You will need:
21cm round loose-bottomed tin
175g unsalted butter
200g 70% cocoa dark chocolate
200g muscavado sugar (the recipe used light, but I only had dark and this worked fine! I also didn't have slightly enough so made up the rest with caster sugar)
3 eggs
70g plain flour (plus extra if the mixture looks like it needs it)
1 tablespoon cocoa powder
1 teaspoon baking powder
100g milk chocolate chips

 Grease your cake tin with butter.
 Break the chocolate into chunks and put these in a saucepan. Add in the butter and the sugar and melt over a low heat until combined.
 Once the chocolate/butter/sugar is combined, whisk the eggs in a separate mixing bowl.
 Mix in the chocolate mixture to the egg and then stir in the flour/cocoa powder/baking powder - this is where you might need extra flour because if the chocolate mixture is too hot it will just scramble the eggs which is obviously something you don't want to happen! I would leave the chocolate mixture to cool for a few minutes before adding, but if you find the mixture looks a bit lumpy add in more flour and mix this in until it becomes smooth.
 At this point I would heat your oven to 190C/375F/Gas Mark 5.




 Once the mixture is smooth, fold in the chocolate chips.
 Pour the mixture into the tin and bake for 40 minutes in the centre of the oven until a skewer poked in the middle comes out clean. Cool the cake in the tin and then transfer to a wire rack.
 Before serving sprinkle over over some cocoa powder.
 TUCK IN.




Not so good for those on a diet, but because it's so rich you only need a small slice! With both Tom and I eating it, it took about six days to eat it all so you get a lot from a seemingly small cake.
