Christmas Shortbread


 At this time of year, there's nothing better than baking whilst it's cold and rainy outside, and you have a Christmas playlist playing. Shortbread is something that everyone seems to buy at Christmas, but why not have a go at making your own?
You will need:
300g plain flour
200g softened butter
100g caster sugar
Vanilla extract
Icing sugar to dust over the top

Rub together the flour and the butter until a breadcrumb consistency. Stir in the sugar, add a few drops of vanilla and form into a dough. I found you needed to get your hands in to do this! Wrap the dough in clingfilm and leave in the fridge for about half an hour (I actually ended up leaving it for two hours by accident and it came out like a brick so I had to wait until the next day to roll it our lols). Preheat the oven to 200C/392F/GM6, roll out the dough (I think mine could actually have been thicker!) place on a baking tray and bake for 8-10 minutes until golden. Leave to cool before dusting with icing sugar and tuck in!
