Hello! Following on from my 'How To: Origami Pig' post, this post is a 'How To' but a cooking one. My mum and I made these mushroom puff pasties and I just had to share the recipe with you! These are one of my absolute favourites and don't take that much effort to make. This recipe is taken from the cookbook The Ultimate Vegetarian Cookbook by Roz Denny.
Ingredients:
- 1 block of puff pastry (You can make your own, but making your own puff pastry is so tricky!)
- 1 egg beaten
- 1 chopped onion
- 1 grated carrot
- 1 grated medium potato
- 45ml/ 3tbsp sunflower oil
- 225g sliced mushrooms
- 30ml/ 2tbsp soy sauce
- 15ml/ 1tbsp tomato ketchup
- pinch of dried thyme
- salt and ground black pepper
The recipe says to roll out the pastry first, but I made the filling first as it needs to cool before it is put into the pastry.
Process:
- Gently fry the onion, carrot and potato in the oil for 5 minutes.
- Add the mushrooms; soy sauce, ketchup, thyme, salt and pepper.
- Cook until softened and then leave to cool.
- When the filling has cooled, you can then prepare the pastry. When the pastry is still in a block, cut this into 8 squares.
- Roll out each block until they are 6mm/ 1/4 inch thick. At this stage preheat your oven to 200°C/ 400°F/ Gas Mark 6.
- Divide the filling and place it on one side of the pastry. Brush the edges with the egg and then fold over and press together with a fork. (We had a special pasty utensil that folded it over for us!)
- Set the pasties on baking sheets and glaze with the rest of the egg.
- Bake for 15-20 minutes or until golden brown. In our fan oven it took about 13 minutes.
- Enjoy! They are lovely hot and fresh or great cold for lunch.

I love pasties and mushrooms. I haven't thought about making my own those but yours look really simple to make and I like how it doesn't have too many ingredients.

DeleteThey are really easy to make, if you buy pre-made pastry. Can eat them cold but I prefer them warm
